The Virtues of Lemon Balm

I am going to on about the beauty of lemon balm today. It has calming properties. Herbalists classify it as a relaxing nervine, a herb that relaxes, soothes, and supports the nervous system. It can help relieve pain due to tension including headaches, back pain, and stomach cramps. It can be used as a milk sedative to promote sleep. I could go on but I'm sure you are much more interested in the recipe.

Lemon Balm Water

This is a very simple way to lightly flavor your water and make a delicious and refreshing degree. If you are going to use fresh lemon balm, slightly crush the lemon balm spring between your palms to release its aromatic properties.

Ingredients:

1 spring fresh lemon balm (approximately 10 leaves), or 1 tablespoon dried lemon balm
1 thin slice of lemon
2 thin slices of cucumber

Directions:

1. Place the fresh or dried lemon balm, lemon slice, and cucumber slices in a one quart jar.

2. Fill the jar with 4 cups of lukewarm water and let sit for 2 to 4 hours so the flavors can infuse. (If you are using dried lemon balm, you want want to strain this to avoid drinking the tiny leaves, or use a straw with a strainer.)

3. Drink within 24 hours as it is or iced.
