1 pound cremini or large white mushrooms, sliced 1/3 inch thick
Salt and freshly milled pepper
2-3 Tbsp olive oil
3 Tbsp chopped parsley
2 garlic cloves
2 pinches red pepper flakes
3 Tbsp toasted pine nuts
1. Prehear the oven to 400F. Put the mushrooms in a wide, shallow baking dish, season with salt and pepper, and toss with the oil.
2. Bake until sizzling, about 25 minutes.
3. Meanwhile, chop the parsley and garlic together. When the mushrooms are done, toss them with the parsley and pepper flakes.
4. Scatter the pine nuts over the top and serve.
